As if you needed another reason to brunch!
This recipe contains:

Ingredients:
1 medium avocado; sliced and divided
2 large eggs; poached
3 tbs. Extra virgin olive oil
2 tsp. Butter or ghee
2 vines of NatureSweet® D’VINES® tomatoes
1 bread of your choice; English muffin, bagel half, paleo muffin, or slice of French bread
Chopped crispy bacon on top
Instructions:
Preheat oven to 400 degrees.
Place NatureSweet® D’VINES® tomatoes on metal pan lined with foil. Drizzle with olive oil and roast for 10 minutes. Set aside.
Spread butter or ghee on bread of choice; toast in broiler till just golden.
Top bread with 1/2 sliced avocado and 1 poached egg.
Place small vine of roasted NatureSweet® D’VINES® tomatoes on top. Sprinkle with chopped crispy bacon.
