Asparagus Tomato Salad

14 oz. asparagus
1/4 cup olive oil
salt and pepper, as desired
1 tbsp. fresh thyme leaves
1 cup balsamic vinegar
2 tbsp brown sugar
1/4 cup olive oil
1 cup Cherubs
1 piece Burrata cheese
1/2 cup pine nuts


In a bowl, combine asparagus, olive oil, thyme, salt, and pepper. Mix thoroughly using tongs and set aside.
Grill asparagus for 5 minutes or until bright and crisp. Set aside.
In a pot over medium heat, combine balsamic vinegar and brown sugar. Cook for 10 minutes or until reduced and add olive oil. Remove from heat and set aside.
On a chopping board, cut Cherubs® in halves and set aside.
Arrange asparagus in a platter, top with Cherubs®, roasted pine nuts, and Burrata cheese, and drizzle with vinaigrette.
