Chicken Parmesan Toast

4 NatureSweet® Tomatoes on the Vine
1 red bell pepper
1 head of garlic
sea salt and pepper
olive oil
3 cups breadcrumbs
3 tbsp paprika
3 tbsp oregano
5 tbsp parsley
3/4 cup parmesan cheese
500 grams chicken breast
2 cups flour
4 eggs
4 bagels
1 cup fresh mozzarella cheese
1 cup parmesan cheese
basil leaves, for garnish

Place Tomatoes on the Vine NatureSweet®, bell pepper, garlic, thyme, salt, pepper, and olive oil in a tray. Bake at 356 °F for 35 minutes or until all the ingredients are well- cooked and golden. Blend and set aside.
Combine bread crumbs, salt, pepper, paprika, oregano, parsley, and parmesan cheese in a bowl.
Coat chicken with flour, dip into egg batter, and dredge in breadcrumbs. Fry the chicken in a skillet with oil at medium heat for 3 to 5 minutes on each side or until golden brown.
Cut the bagels in half, spread tomato sauce, and add chicken, mozzarella cheese, and parmesan cheese. Bake the bagel for 5 minutes or until the cheese is melted.
Cut Tomatoes on the Vine NatureSweet® and set aside.
Garnish the toast with Tomatoes on the Vine NatureSweet® and basil leaves.
