Fresh Lentil Salad

1 cup Cherubs®
1 1/2 cups lentils
3 cups water
1/4 onion
1 garlic clove
1 tablespoon mustard
2 tablespoons red wine vinegar
2 tablespoons lime juice
salt and pepper
1/4 cup olive oil
1 tablespoon ginger
1/2 cup red onion
1 cup NatureSweet® Baby Cucumbers
1/2 cup cilantro


For cooking the lentils: In a pot with water, place lentils, onion, and garlic and cook over medium heat. Once water simmers, lower heat, cover, and cook for at least 20 minutes. Lentils must be cooked over low heat to keep the skin from peeling off easily. Drain and cool under cold running water. Set aside.
For the vinaigrette: In a bowl and using a whisk, mix mustard, red wine vinegar, lime juice, salt, pepper, and olive oil until completely incorporated.
In a bowl, mix cooked lentils, ginger, red onion, NatureSweet® Baby cucumbers, Cherubs®, cilantro, spearmint, and vinaigrette until completely incorporated. Let cool for at least 20 minutes. Once cold, serve in the Beyond Jars.
