Grilled Glorys(R) Caesar Salad

A sizzling spin on an American classic

Ingredients:

For dressing:
  • 3 cloves garlic
  • 3 anchovy fillets, packed in olive oil
  • 2 tbsp. lemon juice
  • Zest from 1 lemon
  • 1 large egg yolk
  • Salt and pepper, to taste
  • 3/4 to 1 cup extra virgin olive oil
For salad:
  • 1 (10.5-oz.) container NatureSweet® Glorys® tomatoes
  • 2 hearts romaine lettuce, halved lengthwise
  • Olive oil, for grilling
  • Salt and pepper, to taste
  • 1 small French baguette, sliced 1” thick
  • Shaved parmesan cheese, for garnish

Instructions:

  1. Preheat grill. In blender, combine garlic, anchovy fillets, lemon juice, lemon zest, egg yolk, salt and pepper. Blend on high until combined. With blender running, slowly pour in extra virgin olive oil until thick dressing forms. Set dressing aside (can be made up to 1 day ahead).
  2. Thread NatureSweet® Glorys® tomatoes onto skewers. Coat cut side of romaine hearts with olive oil and season with salt and pepper. Brush both sides of baguette slices with olive oil.
  3. Grill romaine cut-side down until tender and grill marks appear, 2-3 minutes. Grill tomato skewers 5 minutes, flipping halfway through, until tomatoes are blistered. Grill baguette slices 2-3 per side, until just crisp. When cool enough to handle, tear baguette slices in half.
  4. Arrange grilled romaine on serving platter and drizzle with dressing. Top with grilled baguette pieces, grilled tomatoes, and shaved parmesan.
