Salmon Skewers

Ingredients:

1 tablespoon garlic
2 tablespoons dill
2 tablespoons capers
2 tablespoons lime juice
1 teaspoon black peppercorn
1/4 teaspoon clove
salt (as needed)
1/4 cup olive oil
1 pound salmon fillet
10 oz. Constellation®
1 package NatureSweet® Mini Sweet Peppers
dill, lime, yogurt for garnish and dip

Instructions:

On a chopping board, cut NatureSweet® Mini Sweet Peppers into quarters. Set aside.
For the vinaigrette: In a bowl, combine garlic, dill, capers, lime juice, crushed black pepper, clove, and salt. Pour in olive oil little by little in an even stream and whisk vigorously until emulsified.
Set a little vinaigrette aside to brush skewers. Pour vinaigrette over salmon and let sit for 10 minutes.
For assembling the skewers: Thread a NatureSweet® Mini Sweet Peppers piece, a salmon piece, and a Constellation® piece onto a skewer. Alternate ingredients depending on your preference. Make as many skewers as possible.
Once assembled, brush salmon skewers with reserved vinaigrette. Heat a grill or skillet over high heat and cook salmon skewers until cooked through for about 5 minutes. Remember to lightly grease the grill or skillet to keep salmon skewers from sticking.
Garnish salmon skewers with dill and limes and yogurt dip on the side.
