Sweet Italian Pepper Cheesesteaks with Smoky Red Pepper Aioli

Family meals just got more fun, delicious and easy! Put your sheet pan to work on a busy weeknight with these vegetable-forward cheesesteaks made even better with caramelized rings of Super Sweet Italian peppers and a sweetly smoky red pepper aioli.

Ingredients:

For the aioli
2 NatureSweet Super Sweet Italian Peppers, stems and seeds removed, cut into large slices
2 teaspoon olive oil
½ teaspoon salt
½ teaspoon ground chipotle
½ teaspoon honey
For the cheesesteaks
3 NatureSweet Super Sweet Italian Peppers
8 ounces white or brown mushrooms or portobellos, sliced thick
1 small red onion, sliced (1 cup)
4 cloves garlic, thinly sliced
1 teaspoon dried oregano
1 teaspoon freshly ground black pepper
¼ cup olive oil
8 slices provolone cheese
4 hoagie rolls, lightly toasted

Instructions:

The aioli
Place a sheet pan in the oven and preheat to 375°F.
Toss the sliced peppers with the olive oil and spread onto the heated sheet pan. Roast for 15 minutes or until softened and lightly blackened.
Remove from the oven and wrap the softened pepper into aluminum foil for 10 minutes. Transfer from the foil, and place the peppers into a blender or small food processor. Add the salt, chipotle and honey. Purée for a few seconds until mostly smooth (add more olive oil, one teaspoon at a time, as necessary to help create a smooth consistency). Set aside until ready to use.
The Cheesesteaks
Slice off the tops of the peppers, and remove the seeds. Cut the peppers into rings. Place into a large mixing bowl along with the mushrooms, onion, garlic, oregano, black pepper and olive oil and toss until fully coated. Spread onto the heated sheet pan, and roast in the oven for 25 minutes, stirring halfway through, or until the vegetables are softened and beginning to brown.
Remove the pan from the oven, and place the provolone cheese on top of the vegetables. Place back in the oven for another 5 minutes or until the cheese begins to melt.
Spread the Smoky Red Pepper Honey Aioli on the inside of each toasted hoagie roll. Fill each roll with ¼ of the roasted vegetables and melted cheese. Serve immediately.
