Enjoy gatherings with this amazing goat cheese and tomato dip prepared with a smooth garlic paste, the sweetness of Glorys® tomatoes and, Brie and Mozzarella cheese mixtures!

Ingredients:
Cheese Tomato Dip
1/4 cup olive oil
1/4 cup chile de árbol pepper
1/3 cup extra virgin olive oil
1/2 piece garlic head
sea salt
1/4 cup goat cheese
1 piece brie cheese
1/2 cup mozzarella cheese
1 tablespoon heavy cream
1 cup Glorys®
thyme as desired
1 piece sliced and toasted baguette
Instructions:
Preheat oven to 400 °F.
Place Glorys® on a baking sheet with olive oil, salt, pepper, and thyme. Roast at 400 °F for 7 minutes. Set aside.
Cut off the top of a garlic head, place it in aluminum foil, and add olive oil and salt. Close aluminum foil tightly and bake for 30 minutes or until garlic cloves are very soft. Remove and let cool slightly.
Peel garlic and remove salt. Transfer to a bowl and using a fork mash garlic cloves. Set aside.
Carefully remove the circular end off brie cheese without breaking it. Remove the inside without tearing up the bottom or the sides.
In a bowl, add the soft part of Brie cheese, goat cheese, Mozzarella cheese, garlic paste, heavy cream, thyme, and salt, and mix thoroughly.
Brush a sheet of aluminum oil with a bit of oil and cover the bottom of the Brie cheese rind to help it hold its shape, leaving the top uncovered.
Pour cheese mixture inside the Brie cheese rind add Glorys® and season. Bake for 10 minutes or until the surface is golden brown and tomatoes are cooked through.
In a small pot, add olive oil and chile de árbol pepper, and cook over low heat until oil slightly turns the color of chiles. Turn off heat and set aside.
Garnish with chile de árbol pepper oil and serve with toast.
