6 NatureSweet Mini Cucumbers
1/2 red onion
1/2 bunch cilantro
1/2 teaspoon garlic powder
1 teaspoon oregano
1/4 teaspoon ground pepper
1 teaspoon salt
1/4 teaspoon sugar
1/2 cup avocado oil
basil, for garnish
On a chopping board, cut NatureSweet® mini cucumber into thick round slices, cut red onion into thin strips, cut avocado into irregular large-sized cubes, and finely chop cilantro. Set aside.
2 In a bowl, add lime juice, garlic powder, oregano, ground pepper, salt, and sugar. Pour avocado oil in an even stream while mixing with a whisk until an emulsion is obtained.
In a bowl, combine all chopped vegetables, Cherubs® and mix gently to keep avocado from overmixing.
