Chicken Lime Bowl

1 cup orzo
1 1/2 cups chicken broth for cooking orzo
salt for cooking orzo
2 teaspoons lime juice for cooking orzo
1 tablespoon butter for cooking orzo
1 tablespoon parsley finely chopped
2 chicken cutlets
1/4 cup lime juice
1 tablespoon olive oil
salt and pepper
1 teaspoon garlic powder & 1 teaspoon onion powder
1 cup Cherubs
2 tablespoons lime juice
1/4 cup apple cider viengar
1 cup olive oil
1 cup avocado cut into quarters
parsley for garnish


In a pot, combine orzo, chicken broth, and salt. Cook for 10 minutes or until liquid is absorbed. Add lime juice, butter, and parsley. Mix thoroughly and set aside.
For the chicken: In a bowl, mix chicken cutlets, olive oil, salt, pepper, garlic powder, and onion powder thoroughly. Cover with plastic wrap and refrigerate for 15 minutes.
Grill chicken over medium heat for 15 minutes. Remove from heat and cut into strips.
Cut Cherubs® into halves and set aside.
In a bowl, combine lime juice, apple cider vinegar, and salt. Pour olive oil little by little, whisk until emulsified and set aside.
Serve orzo in a bowl, top with chicken strips, avocado, and Cherubs®, garnish with parsley leaves, and drizzle with vinaigrette.
