Constellation Parmesan Crostata

2 cups Constellations, sliced in half
1 garlic clove, minced
1 tsp salt
¼ cup mascarpone cheese (sub. Cream cheese)
¼ cup parmesan cheese
1 tsp fresh thyme (optional)
8 oz. puff pastry
1 egg, beaten
1 tsp sesame seeds (optional)


Preheat the oven to 400°F. Line an 18 by 13-inch baking sheet with parchment paper.
Toss the tomatoes, garlic, and salt in a small bowl. Set aside.
Roll out the puff pastry into an 18 by 12-inch rectangle, trimming the edges with a sharp knife.
Spread an even layer of mascarpone cheese on the puff pastry, leaving a 1-inch margin.
Sprinkle the grated Parmesan cheese on top.
Arrange tomatoes in a single layer on top of the cheese. Sprinkle with thyme, if using.
Brush the top of the dough with egg wash, avoiding the sides or it may prevent the crust from puffing up.
Sprinkle sesame seeds on the crust, if using.
Bake for 20 to 25 minutes or until puffed up and golden brown.
