Cowboy Caviar with Cherubs

Made with NatureSweet Cherubs black beans, corn, avocado, and a simple dressing, this dish is perfect for any party or gathering. Serve it with tortilla chips for an extra special treat!
Ingredients:

- ¼ cup red wine vinegar
- 1 Tbsp garlic powder
- 2 Tbsp lime juice
- 1 Tbsp granulated sugar
- Kosher salt and black pepper to taste
- 1 10 oz Naturesweet Cherubs®, diced
- 1 large avocado, cubed
- ½ sweet onion, finely diced
- 1 (15-ounce) can black beans, rinsed
- 1 (15-ounce) can black-eyed peas, rinsed
- 1½ cups fresh sweet corn kernels
- 1 orange bell pepper, seeded and finely diced
- 1 jalapeño, seeded and finely diced
- ½ cup chopped cilantro leaves and tender stems
Instructions:
Cowboy Caviar- First, combine NatureSweet® Cherubs®, avocado, sweet onion, black beans, black eyed peas, corn, bell pepper, jalapeño pepper, and cilantro in a large bowl. Toss well so that ingredients are well-combined.
- Next in a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.
- Then, pour dressing over other ingredients and stir.
- Keep refrigerated. If not serving immediately, be sure to toss and stir well before serving.
