Cowboy Caviar with Cherubs

  • ⅓ cup olive oil
  • ¼ cup red wine vinegar
  • 1 Tbsp garlic powder
  • 2 Tbsp lime juice
  • 1 Tbsp granulated sugar
  • Kosher salt and black pepper to taste
  • 1 10 oz Naturesweet Cherubs®, diced
  • 1 large avocado, cubed
  • ½ sweet onion, finely diced
  • 1 (15-ounce) can black beans, rinsed
  • 1 (15-ounce) can black-eyed peas, rinsed
  • 1½ cups fresh sweet corn kernels
  • 1 orange bell pepper, seeded and finely diced
  • 1 jalapeño, seeded and finely diced
  • ½ cup chopped cilantro leaves and tender stems


Cowboy Caviar
  1. First, combine NatureSweet® Cherubs®, avocado, sweet onion, black beans, black eyed peas, corn, bell pepper, jalapeño pepper, and cilantro in a large bowl. Toss well so that ingredients are well-combined.
  2. Next in a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.
  3. Then, pour dressing over other ingredients and stir.
  4. Keep refrigerated. If not serving immediately, be sure to toss and stir well before serving.
