Grilled Chicken with Glorys® Tomato & Bean Relish

Ingredients:

1 tsp. chili powder
1/2 tsp. ground cumin
1/4 tsp. kosher salt
1/4 tsp. freshly ground black pepper
4 boneless skinless chicken breasts, each about 6 oz.
1 tbsp. olive oil
Relish
1 10-oz. container NatureSweet® Glorys® tomatoes, quartered
1 tbsp. olive oil
1/2 cup finely chopped red onion
1 tsp. chili powder
1 15-oz. can black beans, rinsed and drained
2 tbsp. canned diced green chiles
3 tbsp. roughly chopped fresh cilantro

Instructions:

Preheat the grill on medium heat.
In a small bowl, mix chili powder, cumin, salt and pepper. Brush the chicken lightly with olive oil on both sides, then sprinkle the spice mix evenly over chicken on both sides.
Grill chicken over medium heat until opaque all the way to the center, 10 to 12 minutes, turning once or twice.
While chicken is grilling, warm the olive oil in a medium skillet over medium heat. Add the red onions and sauté for 1 to 2 minutes. Stir in chili powder, black beans and green chiles, and sauté for an additional 2 to 3 minutes. Add tomatoes to the skillet, and heat until the tomatoes are warm, about 2 minutes. Remove the skillet from the heat and set aside.
To serve, place the warm relish on a plate and top with sliced chicken breasts. Garnish with chopped cilantro.
