Grilled Chicken with NatureSweet® Glorys® Tomato and Bean Relish

A great new way with chicken
Ingredients:
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/4 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 4 boneless skinless chicken breasts, each about 6 oz.
- 1 tbsp. olive oil
- 1 10-oz. container NatureSweet® Glorys® tomatoes, quartered
- 1 tbsp. olive oil
- 1/2 cup finely chopped red onion
- 1 tsp. chili powder
- 1 15-oz. can black beans, rinsed and drained
- 2 tbsp. canned diced green chiles
- 3 tbsp. roughly chopped fresh cilantro
Instructions:
- Preheat the grill on medium heat.
- In a small bowl, mix chili powder, cumin, salt and pepper. Brush the chicken lightly with olive oil on both sides, then sprinkle the spice mix evenly over chicken on both sides.
- Grill chicken over medium heat until opaque all the way to the center, 10 to 12 minutes, turning once or twice.
- While chicken is grilling, warm the olive oil in a medium skillet over medium heat. Add the red onions and sauté for 1 to 2 minutes. Stir in chili powder, black beans and green chiles, and sauté for an additional 2 to 3 minutes. Add tomatoes to the skillet, and heat until the tomatoes are warm, about 2 minutes. Remove the skillet from the heat and set aside.
- To serve, place the warm relish on a plate and top with sliced chicken breasts. Garnish with chopped cilantro.
