Marinated Cheese Antipasto Appetizer

Ingredients:

1 cup your favorite cheese, cut into cubes - we used cheddar
1 cup thick-sliced salami rounds
1 cup mini pickles
1 cup sliced RealSweet® Vidalia® onions
1 cup NatureSweet Cherubs tomatoes
1/4 cup chopped fresh herbs - we used Italian parsley and basil
1/3 cup olive oil
2 tbsp apple cider vinegar
1 clove garlic, minced
1/2 tsp salt & pepper

Instructions:

In a large jar or container, layer the cheese, salami, pickles, Vidalia onions, and tomatoes.
In a small bowl, whisk together olive oil, vinegar, minced garlic, salt and pepper.
Pour the marinade over the layered ingredients in the jar.
Add in the chopped fresh herbs.
Close the jar and give it a little shake to ensure everything is coated.
Seal the jar tightly and refrigerate for at least 2 hours, or overnight.
Before serving, give the jar a gentle shake or stir.
Serve with toothpicks directly from the jar or pour into a bowl to platter.
Notes: If the olive oil solidifies in the refrigerator, let the jar sit at room temperature for a few minutes before serving.
