Mediterranean Power Bowl

This bowl is a perfect summer lunch and the stand out ingredient is the NatureSweet Cherubs! They give each bite the best burst of flavor and pair so well with all of these mediterranean toppings.

Ingredients:

  • 1/4 cup NatureSweet Cherubs Tomatoes, diced
  • 1/3 cup cooked brown rice
  • 1 cup spinach
  • 1/4 cup cucumber, diced
  • 1/2 shallot, sliced
  • 1/4 cup chickpeas
  • 1/4 feta cheese, crumbled
  • 1/2 avocado, sliced
  • fresh dill, for garnish
Lemon Vinaigrette:
  • 1/2 lemon, juiced
  • 1/3 cup olive oil
  • 1 tsp dijon mustard
  • 1 Tbsp honey
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions:

Bowl:
  1. Add spinach as your base and top with cooked brown rice.
  2. Prepare the lemon vinaigrette. In a small bowl, combine 1/3 cup olive oil, juice of 1/2 a lemon, 1 tsp dijon mustard, 1 tbsp honey, 1 tsp salt, and 1/2 tsp pepper. Whisk to combine.
  3. Add NatureSweet Cherubs Tomatoes, chickpeas, shallot, cucumber, feta cheese, avocado, and fresh dill.
  4. Serve with lemon vinaigrette and enjoy!
