NatureSweet® D’VINES® Benedict
As if you needed another reason to brunch!
- 1 medium avocado; sliced and divided
- 2 large eggs; poached
- 3 tbs. Extra virgin olive oil
- 2 tsp. Butter or ghee
- 2 vines of NatureSweet® D’VINES® tomatoes
- 1 bread of your choice; English muﬃn, bagel half, paleo muﬃn, or slice of French bread
- Chopped crispy bacon on top
- Preheat oven to 400 degrees.
- Place NatureSweet® D’VINES® tomatoes on metal pan lined with foil. Drizzle with olive oil and roast for 10 minutes. Set aside.
- Spread butter or ghee on bread of choice; toast in broiler till just golden.
- Top bread with 1/2 sliced avocado and 1 poached egg.
- Place small vine of roasted NatureSweet® D’VINES® tomatoes on top. Sprinkle with chopped crispy bacon.
