Roasted Comet® Tomato Hummus
A sunny, yummy dip
This recipe contains:

Ingredients:
1 container NatureSweet® Comet® tomatoes
1 tsp. olive oil
Pinch salt
Pinch ground black pepper
3-4 garlic cloves
2 cups chickpeas, cooked
Juice of 1 lemon
1 tsp. lemon zest
3/4 cup tahini
1/4 cup olive oil
Salt to taste
Ground black pepper to taste
Instructions:
Preheat oven to 450° F.
Toss the tomatoes with 1 tsp. olive oil and salt and pepper.
Spread tomatoes on a baking sheet, and put in the oven until skins have split and browned and the tomatoes are softened.
Put the tomatoes in a blender and blend until well broken down. Add the remaining ingredients, and blend until smooth.
Adjust seasoning with salt and pepper.
Serve with pita chips.
