Roasted NatureSweet® SunBursts® Tomato Hummus

A sunny, yummy dip

Ingredients:

  • 1 container NatureSweet® SunBurst® tomatoes
  • 1 tsp. olive oil
  • Pinch salt
  • Pinch ground black pepper
  • 3-4 garlic cloves
  • 2 cups chickpeas, cooked
  • Juice of 1 lemon
  • 1 tsp. lemon zest
  • 3/4 cup tahini
  • 1/4 cup olive oil
  • Salt to taste
  • Ground black pepper to taste

Instructions:

  1. Preheat oven to 450° F.
  2. Toss the tomatoes with 1 tsp. olive oil and salt and pepper.
  3. Spread tomatoes on a baking sheet, and put in the oven until skins have split and browned and the tomatoes are softened.
  4. Put the tomatoes in a blender and blend until well broken down. Add the remaining ingredients, and blend until smooth.
  5. Adjust seasoning with salt and pepper.
  6. Serve with pita chips.
