Roasted Tomato Salad
Italian salad featuring roasted Cherubs® with a hint of garlic and balsamic vinegar, arugula, spinach, and Prosciutto, drizzled with a bright basil dressing.

Ingredients:
Roasted Tomato Salad
2 cups Cherubs
6 cloves garlic
1cup extra virgin olive oil
1/3 cup balsamic vinegar
1 tablespoon basil
salt and pepper
1 teaspoon oregano
1 cup arugula
2 cups spinach
1 cup Prosciutto
1 cup burrata
Instructions:
Roasted Tomato Salad
On a baking sheet, place Cherubs ® and garlic, and drizzle with olive oil. Season with oregano, salt, and pepper. Roast in the oven for 20 minutes at 360 °F. Set aside.
For the vinaigrette: In a bowl, combine extra virgin olive oil, balsamic vinegar, roasted garlic, and basil. Using a hand blender, blend for 1 minute until emulsified. Season with salt and pepper.
On a salad plate, place arugula, spinach, Prosciutto, Burrata, and roasted tomatoes. Serve with vinaigrette on the side.
