Skirt Steak Salad with Cheese Dressing
Fresh and high in protein, this salad has the perfect combination for a one-dish meal; a flavor and texture combo you cannot miss.
Ingredients:
1 tablespoon white vinegar
1 clove garlic
1/2 teaspoon pepper
1/2 teaspoon salt
1/4 cup blue cheese
1 cup sour cream
1/4 cup mayonnaise
2 tablespoons vegetable oil
1 pound skirt steak
1/2 cup NatureSweet® Baby Cucumbers
1/2 cup Cherubs®
4 cups lettuce mix
1 cup yellow corn
1 cup goat cheese
1 cup cilantro
Instructions:
For the cheese dressing: Combine white vinegar with garlic, pepper, salt, blue cheese, sour cream, and mayonnaise in a blender and blend for about 3 minutes or until smooth. Set aside in the fridge.
Heat a grill or skillet and cook skirt steak for 6 minutes, about three minutes on each side, depending on doneness preference. Remove from heat and let rest.
Cut NatureSweet® Baby Cucumbers and Cherubs® in half.
For assembling the salad: Combine lettuce mix, roasted yellow corn, NatureSweet® Baby Cucumbers, Cherubs®, and goat cheese. Place sliced skirt steak in the center and garnish with cilantro.
Serve with cheese dressing on the side.
