Thai Beef Salad

Mini Cucumbers
Ingredients:
2 tablespoons ginger, finely chopped
1 tablespoon garlic, finely chopped
4 tablespoon fish sauce
3/4 cup lime juice
salt and pepper
2.2 pounds beef medallion steaks
vegetable oil
1 teaspoon sugar
2 tablespoons chili flakes
2 tablespoons olive oil
1 cup Constellation Medley Tomatoes®
1 cup red onion
1 cup NatureSweet Mini Cucumbers
1 cup cilantro leaves
1 cup mint, finely chopped
1 cup celery, cut into slices
1/4 cup toasted peanuts
1/2 cup green onion, cut
Instructions:
In a bowl, combine ginger, garlic, 1 tablespoon fish sauce, 1/4 cup lime juice, salt, and pepper. Set aside.
In a baking dish, place beef medallion steaks and pour the marinade. Let rest for 1 hour.
In a grill, heat vegetable oil. Cook beef medallion steaks over medium-high heat for 15-20 minutes. Remove beef medallion steaks and slice. Set aside.
In a bowl, combine fish sauce, lime juice, sugar, chile flakes, and olive oil in a bowl. Mix thoroughly and set aside.
Cut Constellation® Medley into halves and set aside.
In a bowl, combine Constellation® Medley, onions, Mini cucumbers, cilantro, mint, celery, peanuts, green onions, and beef slices.
Serve with vinaigrette on the side.
