Couscous Salad

Enjoy this fresh salad prepared with couscous and Cherubs®, which are low-calorie, low-fat, cholesterol-free, sodium-free, and a great source of fiber, an important nutrient for your heart and digestive system!

Ingredients:

1 ½ cup couscous cooked and fried
1 ½ cups water
1 tablespoon butter
salt
1 cup Cherubs® cut into quarters
½ cup red onion finely chopped
¼ cup pecans toasted and cut into chunks
½ cup NatureSweet®️ Long English Cucumbers cut into medium-sized cubes
½ cup bell pepper cut into medium-sized cubes
1 cup butterhead lettuce cut into chunks
½ cup feta cheese crumbled
¼ cup basil chopped
¼ cup extra virgin olive oil for the vinaigrette
¼ cup apple cider vinegar for the vinaigrette
¼ cup orange juice for the vinaigrette
½ tablespoon paprika for the vinaigrette
salt for the vinaigrette
pepper for the vinaigrette

Instructions:

On a chopping board, cut Cherubs® and NatureSweet® Long English Cucumbers in half. 
In a bowl, combine orange juice, olive oil, paprika, salt, and pepper. Mix thoroughly until salt dissolves. Set aside.
In a pot, pour in water and bring to a boil. Add salt and dissolve stirring with a spoon. Remove from heat.
Add couscous, spread throughout the pot, cover, and let rest for 5 minutes in hot water.
Place the pot back over medium heat, add butter, and stir using a spoon separating the couscous granules. Remove from heat and let cool.
In a bowl, add cold couscous, onion, Cherubs®, NatureSweet®️ Long English Cucumbers, bell pepper, pecans, and basil. Mix thoroughly and set aside.
In a soup bowl, place a bed of lettuce, couscous mixture, and vinaigrette to taste, and sprinkle with feta cheese.
