Chili Stuffed Bell Peppers

Ingredients:

Chili Stuffed Bell Peppers
3 NatureSweet® Mixed Bell Peppers
2 tablespoons vegetable oil
1/2 cup onion
1 tablespoon garlic
2.2 pounds ground beef
2 cups Constellation®
1/2 cup tomato purée
1/4 cup water
1 cup black beans
3 tablespoons chili flakes
1 tablespoon garlic powder
1 tablespoon onion powder
2 tablespoons cumin
1 tablespoon paprika
1 tablespoon chili powder
salt and pepper

Instructions:

On a chopping board, cut the tops of a NatureSweet® Mixed Bell Pepper using a small knife. Set tops aside. Scoop out flesh and seeds using a spoon. Carve in two triangles for eyes at the top, a smaller triangle for nose right between the eyes, and four triangles or just make a small cut for mouth below the nose. Cut a NatureSweet® Mixed Bell Pepper into small-sized cubes. Set aside.
Blend Constellation® to a smooth purée and set aside.
In a pot over medium heat, heat vegetable oil. Cook onion and garlic for 2 minutes or until they turn color. Add ground beef and NatureSweet® Mixed Bell Peppers cubes and cook for 10 minutes. Add Constellation® purée, tomato purée, water, black beans, chile flakes, garlic powder, onion powder, cumin, paprika, chile powder, salt, and pepper. Mix thoroughly and cook for 20 minutes over low heat making sure it does not burn.
Stuff carved NatureSweet® Mixed Bell Peppers, being careful not to break, nor to overfill them. Place tops onto each stuffed sweet pepper. They are ready to serve and enjoy!
