Long English Cucumber
Ingredients:
Cherubs® Greek Chicken Bowl
2-3 chicken breasts, about 1 lb.
3 tablespoons olive oil
Zest of 1 lemon
4 tablespoons lemon juice
2 garlic cloves, crushed
1 teaspoon dried oregano
½ teaspoon kosher salt
Pepper, to taste
4 cups lettuce, chopped (Romaine typically, but a blend is great, too!)
4 cups chickpeas
4 ounces feta cheese
1 red onion, sliced
1 cucumber, about 2 cups, sliced
4 cups NatureSweet Cherubs® tomatoes
1 cup kalamata olives, pitted
1½ tablespoons cracked black peppercorns
½ cup hummus
½ cup tzatziki sauce
Tzatziki sauce:
½ English cucumber, grated and drained
1 cup plain Greek yogurt
1 garlic clove, minced
1 tablespoon fresh lemon juice
½ tablespoon olive oil
¼ teaspoon kosher salt
⅛ teaspoon ground black pepper
Instructions:
Grilled Chicken
Combine chicken, olive oil, lemon zest and lemon juice, garlic, oregano, salt, and pepper. Marinate for 30 minutes to 1 hour, turning occasionally.
Prep a grill or grill pan with olive oil; remove the chicken from the bag and discard the marinade.
Grill the chicken 5 minutes per side to an internal temperature of 165 degrees.
Remove from heat and allow to rest for 5 minutes. Slice and set aside.
Tzatziki Sauce
Combine all ingredients
Cover and chill for at least 30 minutes
Assembly
Place the chopped lettuce in a large serving bowl.
Arrange chicken, chickpeas, feta, onion, cucumber, olives, and tomatoes separately on top of the lettuce.
Garnish with cracked black peppercorn and a dollop of hummus. Drizzle with tzatziki sauce.
