Ingredients:

Cherubs® Greek Chicken Bowl
  • 2-3 chicken breasts, about 1 lb.
  • 3 tablespoons olive oil
  • Zest of 1 lemon
  • 4 tablespoons lemon juice
  • 2 garlic cloves, crushed
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • Pepper, to taste
  • 4 cups lettuce, chopped (Romaine typically, but a blend is great, too!)
  • 4 cups chickpeas
  • 4 ounces feta cheese
  • 1 red onion, sliced
  • 1 cucumber, about 2 cups, sliced
  • 4 cups NatureSweet Cherubs® tomatoes
  • 1 cup kalamata olives, pitted
  • 1½ tablespoons cracked black peppercorns
  • ½ cup hummus
  • ½ cup tzatziki sauce
Tzatziki sauce:
  • ½ English cucumber, grated and drained
  • 1 cup plain Greek yogurt
  • 1 garlic clove, minced
  • 1 tablespoon fresh lemon juice
  • ½ tablespoon olive oil
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper

Instructions:

Grilled Chicken
  1. Combine chicken, olive oil, lemon zest and lemon juice, garlic, oregano, salt, and pepper. Marinate for 30 minutes to 1 hour, turning occasionally.
  2. Prep a grill or grill pan with olive oil; remove the chicken from the bag and discard the marinade.
  3. Grill the chicken 5 minutes per side to an internal temperature of 165 degrees.
  4. Remove from heat and allow to rest for 5 minutes. Slice and set aside.
Tzatziki Sauce
  1. Combine all ingredients
  2. Cover and chill for at least 30 minutes
Assembly
  1. Place the chopped lettuce in a large serving bowl.
  2. Arrange chicken, chickpeas, feta, onion, cucumber, olives, and tomatoes separately on top of the lettuce.
  3. Garnish with cracked black peppercorn and a dollop of hummus. Drizzle with tzatziki sauce.
