Comets™ Moroccan Couscous
Fragrant spices elevate this delicious dish
- 1 8-oz. box of pearled couscous, cooked
- 2 cups grated or matchstick carrots
- 1 large cucumber, diced
- 1/2 cup raisins
- 1/2 cup parsley, chopped
- 1 (10-oz.) container of NatureSweet® Comets™ tomatoes
- 1 cup dried apricots, diced
- 1/4 cup olive oil
- 1 tbsp. Moroccan Garam Masala spice blend*
- 1 tsp. cumin
- Salt and pepper to taste
- 1 teaspoon cinnamon
- 1 teaspoon coriander
- ½ teaspoon black pepper
- ¼ teaspoon cardamom
- ¼ teaspoon ground cloves
- Combine all the ingredients in a large bowl and toss to combine well.
- Refrigerate for 30 minutes before serving to allow all the flavors to meld.
- Serve either chilled or at room temperature.
