Comets™ Moroccan Couscous

Fragrant spices elevate this delicious dish

Ingredients:

  • 1 8-oz. box of pearled couscous, cooked
  • 2 cups grated or matchstick carrots
  • 1 large cucumber, diced
  • 1/2 cup raisins
  • 1/2 cup parsley, chopped
  • 1 (10.5-oz.) container of NatureSweet® Comets™ tomatoes
  • 1 cup dried apricots, diced
  • 1/4 cup olive oil
  • 1 tbsp. Moroccan Garam Masala spice blend*
  • 1 tsp. cumin
  • Salt and pepper to taste
*If you can’t find Garam Masala spice blend, make your own by combining the following spices:
  • 1 teaspoon cinnamon
  • 1 teaspoon coriander
  • ½ teaspoon black pepper
  • ¼ teaspoon cardamom
  • ¼ teaspoon ground cloves

Instructions:

  1. Combine all the ingredients in a large bowl and toss to combine well.
  2. Refrigerate for 30 minutes before serving to allow all the flavors to meld.
  3. Serve either chilled or at room temperature.
