Falafel Sandwich
We gave a delicious twist to this Mediterranean dish and made it a sandwich! Perfect for lunch and picnics, delight in all the spiced flavors of falafel in a convenient way.

Ingredients:
Falafel Sandwich
1 Cup NatureSweet Glorys
1 1/2 cup Greek Yogurt
1 1/2 cups NatureSweet Long English Cucumber
8 cloves garlic
1 tablespoon dill
1 tablespoon white vinegar
1/2 teaspoon salt
2 cups dried chickpeas
3/4 cup cilantro
1/2 cup dill
1 cup parsley
1/8 onion
1 tablespoon cayenne pepper
1 tablespoon ground cumin
1 tablespoon ground cilantro
Salt and Pepper
2 tablespoons tahini sauce
2 tablespoons sesame seeds
3 tablespoons breadcrumbs
1 teaspoon baking powder
Pita bread
2 cups lettuce
1 1/2 cups arugula
1 cup avocado
Instructions:
Falafel Sandwich
Cut Glorys® in half for the sandwich and set aside. Cut NatureSweet®️ Long English Cucumber into small-sized cubes and into thin slices for the sandwich and set aside.
In a bowl, mix yogurt, NatureSweet®️ Long English Cucumber cubes, 2 cloves garlic, vinegar, and salt thoroughly. Mix and refrigerate until ready to use.
In a food processor, combine chickpeas, cilantro, dill, parsley, 6 cloves garlic, onion,and spices. Season with salt and pepper and add tahini sauce. Grind until smooth and until a thick paste is obtained. Pour into a bowl and let cool for 30 minutes.
Add sesame seeds, breadcrumbs, and baking powder to the chickpea mixture. Mix with a spoon and form 0.3-inch-thick falafels the size of your palm. Freeze for 15 minutes.
Fry falafels in plenty of oil until golden brown. Drain on a paper towel-lined plate.
Slightly heat pita bread to make it pliable and to keep it from breaking. Cut pita bread open horizontally with a knife making sure not to break it.
Stuff pita bread with lettuce, arugula, NatureSweet®️ Long English Cucumber, avocado, 2 falafels, and Glorys®.
Drizzle tzatziki sauce on top and serve.
