Mashed Potatoes with Tomatoes

Mashed Potatoes with Tomatoes
1 cup Constellation®
3 tablespoons olive oil
1 teaspoon sugar
3 sprigs thyme
2 tablespoons oregano
1/2 garlic head
5 potatoes
2 tablespoons butter
1/4 cup milk
salt and pepper
1 tablespoon thyme
Instructions:
Mashed Potatoes with Roasted Tomatoes
Preheat the oven to 430 °F.
On a baking sheet, place Constellation®. Drizzle with olive oil, sprinkle with salt and sugar, and add aromatic herbs. Rub garlic head with olive oil, season with salt, and wrap with aluminum foil. Place on the baking sheet and roast for 15 minutes. Rotate baking sheet and gently stir Constellation® to keep from sticking. Roast for 15 minutes or until they are cooked through and lightly browned. Remove from oven.
In a bowl, mash potatoes. Add butter, milk, salt, pepper, thyme, and roasted garlic cloves. Using a wooden spatula, mix thoroughly until mashed potatoes are smooth. Season with salt, if necessary. Transfer mashed potatoes to an oven-proof skillet, top with roasted Constellation® and aromatic herbs, and drizzle with olive oil. Broil for 5 minutes and serve hot.
