Tomatoes on the vine
Spinach, Mushroom, and Brie Stuffed Tomatoes
4 whole NatureSweet® tomatoes on the vine
1 cup diced mushrooms
2 cloves garlic, minced
1 scallion, chopped
1 cup fresh spinach, chopped
½ cup Italian breadcrumbs
2 oz. of brie cheese, diced
1 tablespoon extra-virgin olive oil
Preheat oven to 350 degrees F
Place NatureSweet® Tomatoes on the vine on a flat surface. Take a sharp knife and cut a circle in the top of the tomato to create a hollow shell.
Remove the inside pulp, chop the pulp, and place in a bowl.
Add the mushrooms, garlic, scallions, spinach, breadcrumbs, oil, and cheese to the bowl; mix well. (You may need to adjust your breadcrumbs if the mixture is too dry or moist depending on how much tomato pulp/juice each tomato yields).
Stuff the tomato mixture into the tomato shells and place in an oven safe baking dish; then bake for 15-20 minutes
