Turkey Stuffed Potatoes

Ingredients:

Turkey Stuffed Potatoes
7 potatoes
4 cups water
3 NatureSweet® Mixed Bell Peppers
1/2 cup Constellation®
2 tablespoons butter
1/2 teaspoon garlic
1/4 cup onion
2 cups smoked turkey breast
1 egg
1/2 cup sour cream
2 tablespoons breadcrumbs
1 cup Manchego cheese
parsley (for garnish)

Instructions:

Turkey Stuffed Potatoes
In a pot with salted water, boil potatoes for 10 minutes or until cooked through.
Place cooked potatoes on a chopping board and cut in half. Scoop flesh out, leaving a ½-inch-thick shell. Set flesh aside. Place potato halves on a baking sheet and set aside.
On a chopping board, cut NatureSweet® Mixed Bell Peppers into small-sized cubes and cut Constellation® in half. Set aside.
In a skillet, melt butter. Add garlic and onion and cook for two minutes. Once they turn color, add smoked turkey, NatureSweet® Mixed Bell Peppers, and Constellation®, and cook for 5 minutes. Transfer to a bowl and add egg, sour cream, breadcrumbs, ½ cup of Manchego cheese, and reserved potato flesh, and mix thoroughly
Spoon stuffing into potato halves and top with Manchego cheese. Bake for 10 minutes to 390° F.
Serve on a platter and garnish with parsley leaves.
