Ingredients:
Vegetarian Pizza
3/4 cut water
2 tablespoons olive oil
1 teaspoon salt
3 1/4 cups flour
1 packet dry yeast
2 teaspoons olive oil
3 cups Constellation
1 cup onion
1 clove garlic
2 teaspoons oregano
salt and pepper
flour for rolling out the dough
2 cups Mozzarella cheese
2 cups Constellation cut into halves to top
1 cup olives cut into halves to top
1/2 cup red onions cut into thin strips
1 cup button mushrooms sliced
basil for garnish
Instructions:
Vegetarian Pizza
In a bowl, mix lukewarm water, olive oil, and salt using the flat beater attachment. Once salt dissolves, add flour and yeast, and mix thoroughly until completely incorporated and until a dough that separates from the bowl is obtained. Transfer dough to a bowl previously greased with olive oil and cover with plastic wrap. Let rise for 1 hour, preferably in a warm place to speed up the process, until doubled in size.
While the dough rises, prepare the sauce. In a small pot over medium heat, heat olive oil and cook onion, Constellation, and garlic over medium heat for 15 minutes or until Constellation fall apart. Season with oregano, salt, and pepper, and blend 5 minutes. Remove from heat and set aside.
Once it has risen, punch down dough with your hand. Flour a flat surface and roll out the dough with a rolling pin into a circle. Transfer to a pizza pan. Ladle a bit of the previously prepared dough, sprinkle cheese on top, distribute Constellation, olives, red onion, and button mushrooms. Bake at 400°F for 30 minutes.
Remove pizza from oven, serve on a board, and garnish with basil.
