Comets Moroccan Couscous

Ingredients:

1 8-oz. box of pearled couscous, cooked
2 cups grated or matchstick carrots
1 large cucumber, diced
1/2 cup raisins
1/2 cup parsley, chopped
1 (10-oz.) container of NatureSweet® Comets™ tomatoes
1 cup dried apricots, diced
1/4 cup olive oil
1 tbsp. Moroccan Garam Masala spice blend*
1 tsp. cumin
Salt and pepper to taste
*If you can’t find Garam Masala spice blend, make your own by combining the following spices:
1 teaspoon cinnamon
1 teaspoon coriander
½ teaspoon black pepper
¼ teaspoon cardamom
¼ teaspoon ground cloves

Instructions:

Combine all the ingredients in a large bowl and toss to combine well.
Refrigerate for 30 minutes before serving to allow all the flavors to meld.
Serve either chilled or at room temperature.
