Quick-roasted Sweet Italian Peppers with Soft Scrambled Eggs and Goat Cheese

These scrambled eggs are cooked in a saucepan and whisked until wonderfully soft and creamy. They’re spooned into Sweet Italian Peppers that have been quickly charred and slightly tender in the oven, then served on top of toasted, buttery pieces of baguette. It’s great for an easy brunch or an eggs-anytime dinner, and easy to do for any level of cook.

Ingredients:

4 NatureSweet Super Sweet Italian Peppers, washed and dried
3 tablespoons olive oil
½ teaspoon kosher salt
12 large eggs
2 tablespoons unsalted butter
½ cup finely chopped NatureSweet Super Sweet Italian Peppers
Salt and pepper to taste
4 ounces goat cheese
2 tablespoons finely chopped chives
1 large baguette
4 tablespoons salted butter, room temperature

Instructions:

Preheat the oven to 425°F.
Place the peppers on a rimmed baking sheet. Evenly drizzle the oil on the peppers and rub with your hands to coat each pepper. Sprinkle the salt all over the peppers. Place in the oven and roast for 10 minutes.
Place the eggs in a medium sauce pan. Add the butter. Place on a burner and turn on the heat to medium-high. Whisk the eggs continuously for 5-8 minutes until the eggs thicken and soft curds form – be patient for the first few minutes. Remove immediately from the heat. Stir in the red pepper and 2 ounces of the goat cheese. Set aside.
Remove the peppers from the oven. Cool for 5 minutes.
Cut the baguette into 4 equal pieces, slice them in half, and toast until just golden, about 3 minutes. Butter each with the salted butter. Place on a platter.
Using a sharp paring knife, slice the peppers open from the stem to the tip. Carefully remove the seeds with a kitchen spoon while keeping the stem intact. Discard the seeds. Place each pepper on top of the baguette.
With a large spoon, fill the peppers evenly with the eggs. Sprinkle crumbled bits of the remaining goat cheese and chives. Season with salt and pepper as desired. Serve immediately.
