2 cups sweet potato
olive oil
sea salt and pepper
1/3 cup Dijon mustard
1/4 cup honey
1/4 cup mayonnaise
1 tablespoon apple cider vinegar
1/4 cup parsley
1/2 teaspoon Cayenne pepper
4 cups lettuce
1 1/2 quinoa
24 oz. Cherubs
1 cup mandarins
3/4 cup cashews
1 avocado
Instructions:
In a baking pan, place sweet potatoes, drizzle with olive oil and sprinkle with salt. Bake at 356 °F for 25 minutes or until cooked through.
In a bowl, mix Dijon mustard, honey, mayonnaise, apple cider vinegar, parsley, Cayenne pepper, salt, and pepper. Set aside.
In a salad bowl, place lettuce mix, quinoa, Cherubs®, mandarin wedges, cashew, avocado.
Serve sweet potato bowl with dressing on the side.
