Creamy Tuscan Salmon

The concoction of flavors within this recipe is a winning combo: a creamy sauce made with cheese, herbs, and tomatoes, plus the rich salmon make a visually stunning dish. Serve with crusty bread on the side.

1 package Glorys®
2 tablespoon olive oil
2.2 pounds salmon
2 tablespoons butter
1 tablespoon garlic
1 cup spinach
2 cups heavy cream
½ cup Parmesan cheese
salt and pepper
3 tablespoons basil
3 tablespoons parsley


On a chopping board, cut Glorys® in half and set aside.
In a skillet over medium-high heat, add a dash of olive oil and sear salmon on both sides (2 minutes on each side). Remove from skillet and set aside.
In the same skillet, add a bit of butter, sliced garlic, Glorys® tomatoes and cook for 3 minutes. Add spinach and cook for 3 more minutes. Add heavy cream and Parmesan cheese, and cook for 5 more minutes or until sauce is reduced by half. Season with salt and pepper and add the herbs.
Return salmon to skillet, cover, and cook for about 3 minutes or until cooked through and flavors meld.
Serve salmon in the same skillet with salad and crusty bread on the side.
