Flavonoids & Tannins
Cucumbers contain antioxidants, such as flavonoids and tannins, which helps prevent the accumulation of harmful free radicals. These antioxidants may also reduce the risk of chronic disease.
Fiber
One emerging benefit of cucumbers is their fibrous nature. Cucumbers are a good source of fiber, and getting an additional 8.5 grams per day of fiber from fruits and vegetables was associated, in recent research, with a 30% risk reduction of diverticulitis, a disease that causes a painful inflammation of the colon.

Preservation
Cut at the stem end and expose only the amount you need. Cut off the chunk you would like to use and rewrap the exposed end and unused portion with your excess wrap. The unused portion should stay wrapped to help the cucumber keep longer.
Did You Know?
Mini Cucumbers are a non-starchy vegetable. The American Diabetes Association recommends three to five servings of non-starchy vegetables per day for healthy blood sugar levels.
Preparation
Be sure to cover exposed sliced areas and place them in the fridge for use within a few days. For unused cucumbers explore picking or freezing for future use.
